Pork & Pineapple Curry – A quick and delicious recipe that is done in 25 minutes! For 2 to 4 servings

· 1 lb of Pork tenderloin, cubed, some coconut oil

· 2 shallots, peeled and quartered

· 1 large Russet potato, peeled, cubed and boiled tender in salted water

· 1 cup of fresh, diced pineapple

· 1 pouch of Curry Love Red Thai Curry Sauce

a) In a hot skillet add some coconut oil, and when shimmering hot, add the pork and the potatoes, season with salt and pepper and fry until they start to brown.

b) Add the shallots and pineapple, stir fry some more

c) Add the Curry Sauce and simmer until done, about 8 to 10 minutes, serve with steamed Jasmine rice and chopped cilantro or Thai basil
